So, to begin with, what are burons? These are small stone houses that once served as a refuge for animals during summer. From then on, certain restaurateurs in Lozère transformed these burons into typical restaurants. Indeed, the preparation of Aligot is done on site and has become one of the most popular specialties! However, many other typical Lozère products such as Laguiole and all kinds of cold-cuts bring happiness to the buron tables.
